Peran Teknik Pencucian dalam Menekan Kontaminasi Kuman di Kantin Kampus Universitas Mulawarman

Keamanan pangan merupakan aspek penting dalam penyediaan makanan di lingkungan perguruan tinggi. Penelitian ini bertujuan untuk menganalisis hubungan antara teknik pencucian peralatan makan dengan tingkat kontaminasi kuman di kantin Universitas Mulawarman. Penelitian ini menggunakan desain cross-sectional dengan metode observasi dan pemeriksaan laboratorium terhadap 25 sampel peralatan makan. Analisis dilakukan menggunakan uji korelasi Spearman. Hasil menunjukkan adanya hubungan signifikan antara teknik pencucian dengan jumlah kuman (Ï = 0,000), sementara fasilitas sanitasi tempat pencucian tidak berhubungan signifikan (Ï = 0,596). Temuan ini menegaskan pentingnya penerapan teknik pencucian yang tepat untuk menekan angka kontaminasi mikroba. Edukasi terhadap penjamah makanan serta peningkatan fasilitas pencucian sangat dianjurkan guna menjamin keamanan pangan di lingkungan kampus.
